Hey yall!

My name is Katie Hines. I am a 21 year old Marketing Major from Fort Smith, AR. Food is one of my hobbies, I enjoy both cooking and baking, I also enjoy trying new food when I’m not cooking. I plan to share with y’all different recipes I cook and different restaurants I try around Arkansas and my travels.

Happy Cheat Day!

I had the craziest week ever last week, which consisted of tests, projects, job interviews and I didn’t have time to cook a healthy dinner…..so I figured it was time to write about everybody’s favorite day during a diet. CHEAT DAY!

After work Friday afternoon, my boyfriend and I drove to hot springs for a weekend of eating, hanging out friends and horse races. Once we got to hot springs Friday night, we had dinner at DeLuca’s pizzeria. DeLucas was voted best pizza in the state since 2018. I’ll let the picture of our pizza explain why. We ordered “The Big Mike” which consisted of meatballs and pepperoni. If you are ever in Hot Springs I highly recommend making plans eat at DeLucas.

Super Bowl Sunday!

My new years resolution was to be more aware of the foods I am eating, I did pretty well during the month of January. With the start of February, came the Super Bowl. I love football and the super bowl, and wanted to make something delicious yet healthy I serve at the super bowl party I hosted. So I came up with this healthy baked chicken wing recipe!

This recipe is a bit time consuming, the finished product is well worth the time.

I began by purchasing 24 organic chicken drumsticks from Kroger. I left them thaw in the refrigerator for about 24 hours.

I started by preheating my oven to 400 degrees.

When I was ready to begin cooking, I covered 3 cookie sheets with foil, and laid the wings on the foil in alternating directions. I then lightly seasoned each piece of chicken with salt, pepper, and garlic powder.

After seasoning, I baked the wings at 400 for 20 minutes, after 20 minutes I flipped the wings and let them bake for another 15 minutes. Totaling the baking time to 35 minutes.

After they are finished baking, I let them rest for 5 minutes. After resting, I put the wings into into a stir fry pan on the oven. I then heavily sauced the wings with barbecue sauce. (You can use any barbecue sauce you like but, I used the barbecue in the picture below.) I left the wings and barbecue sauce on the stove for about 5 minutes on medium heat!

After that, They’re ready to serve!

Healthy Nachos!

I don’t get home from work in Little Rock until 7 most nights. I’ve created this super delicious and healthy nacho recipe that is ready to enjoy in less than 30 minutes!

Here’s how to make my healthy bell pepper nachos!

1. Preheat oven to 400 degrees

2. Slice 3 green bell peppers into cube like sections.

3. Brown 1 pound of ground beef

4. Cover a baking sheet, with a piece of foil

5. Lay bell pepper sections about 1-2 inches apart on foiled baking sheet.

6. Once beef is browned and bell papers are on baking sheet, stack the beef on top of the bell peppers. I put about 2 spoonfuls on each pepper section.

7. Top bell pepper and beef, with Mexican shredded cheese.

8. Bake bell pepper, beef and cheese for 10 minutes at 400 degrees

9. After they are done baking, spoon any type of salsa on top!

10. You are ready to enjoy!
